Can Dealers (like Richmond Hill Subaru) do this competently, or should I look for an aftermarket shop to do this task?
I have the OEM 5-spoke rims.
Practically any tire shop can do that. Dealers included, it all depends on how much you want to spend.

How long does it take for mounting and balancing?
Is it something I can wait for, or should I drop them off for pickup later?

RE760's in hand, to be mounted and balanced tomorrow morning. I hear them calling out from the back of the STi for their first track day at Mosport, THIS Wednesday. This is going to be good!
I am so spoiled, ha ha!

My RE760s did not appreciate track work very much. DDT was ok, but GP was a chunkfest.
They'll need a lot of air pressure, they're a pretty soft tire. Nice and quiet for daily work though.
